Instructions
  1. Preheat the oven to "broil"
  2. Slice the tomatoes by removing the two ends (keep the ends for another dish)
  3. Place tomatoes on wax paper and arrange cheese on top, set aside
  4. Finely cut the French shallots and cook over medium heat until golden brown
  5. Add the mustard and the almond milk (you can add 1-2 pieces of Gruyere for the taste and a creamy texture)
  6. Add the spinach and cook for 2-3 minutes, add a pinch of salt and freshly ground pepper. Remove from fire
  7. Put the tomatoes in the broiler oven. The cooking time is 5-6 min depending on the oven. Remove when cheese has a golden appearance
  8. Place spinach on a plate and place on top of tomatoes, basil or any other fresh herb to taste
